Introduction
Everyone knows that every country in the world has its own cuisine. And it's different for everyone. So in England there are their favorite and traditional dishes.
The theme of the project is devoted to English cuisine, its peculiarities and habits of the English. This topic is very important for studying, as it has a linguistic and cultural character, allows you to learn in detail about the culinary traditions of England, the country of the language being studied.
During the project I studied the traditional food of the British that is what they usually eat and created a "Recipe Book", which included dishes from English cuisine.
Purpose: to get acquainted with the recipes of British cuisine and determine its national identity, which is typical only for the British.
Task:
1) to study the literature about the national cuisine of England;
2) conduct a survey before and after the study;
3) conduct an open lesson;
4) to make a book of recipes of English cuisine in Russian and English
Hypothesis: the basis of English dishes is barley and oats. This is due to the climate: little sun, fog, high humidity. Europe is more southerly, more delicious cultures ripen better, so the English traditional food seems tasteless to Europeans.
Object: a traditional dish of English cuisine.
Subject: English lunch menu
The history of English cuisine
Features of English cuisine
The main factors that shaped traditional English cuisine are the island position of the country and the culinary preferences of the conquerors ranging from Roman legionnaires and German tribes, and ending with the knights of William of Normandy.
Along with the transformation of England into the British Empire, the culinary peculiarities of India, China, and North America began to influence the national cuisine of England.
In the Middle Ages, bread was the main product. Fish was also an important food item. By decree of the Roman Catholic Church, which united the population of England, meat was prohibited on Fridays and until late on Wednesdays and Saturdays.
Sheep breeding has become widespread. Goats were both a source of milk and meat. Beef, mutton was popular.
The basis of English dishes are meat, fish, vegetables and cereals. Very few Englishmen use spices and seasonings.
The assortment of cold snacks is rich. The most popular sandwiches are triangular in shape. The classic sandwiches are triangles of white bread with cucumber.
The British eat a lot of meat: beef, lamb, veal, lean pork. Most often, meat is baked with blood and cut into steaks. Meat is usually served with various sauces and marinades, and vegetables or potatoes are served as a side dish.
Also an important place in the kitchen is occupied by fish meat – cod, herring. Seafood is preferred - squid and lobster.
Traditional dishes of English cuisinе.
English cuisine is famous all over the world for its quality and rather conservative assortment.
Traditional English dishes contain a lot of cheese and bread, meat, poultry, freshwater and marine fish.
From vegetables, the British prefer celery, onions, cucumbers, zucchini, peas, turnips, carrots, tomatoes, broccoli and, of course, potatoes.
From meat, the British prefer chicken varieties, pheasant, traditional turkey. Fruits and berries play one of the most important roles in the preparation of a variety of desserts. These products can also be tried together with the notorious English pastries. Eggs are the main ingredient of the famous English breakfast.
One of the most traditional dishes is deep-fried fish and potatoes, which are usually cooked with salt and alcohol vinegar, and served wrapped in newspaper.
Another traditional phenomenon is sausages with mashed potatoes with onions and gravy. Currently, spices from India and Bangladesh are added to this main English dish as an experiment, giving it a new flavor and taste.
A traditional cucumber sandwich consists of the thinnest slices of cucumber between two slices of white bread thinly buttered.
Cumberland sausages are a type of traditional sausage that originated in the county of Cumberland, England. They are usually very long (up to 50 cm) and are sold twisted into a flat round coil. Sometimes they are made shorter, like ordinary British sausages. Eckles puff is a small, round pie filled with currants. It is made of puff pastry with a lot of butter and is named after the English city of Eckless, near Manchester.
Aspic eel, a delicacy of London's East End, is often served with pie and mashed potatoes. It is usually no longer eaten in London, although the existence of this dish is not news.
Parmo is a variation of chicken with parmesan cheese, apparently invented in the Teesside conurbation in northern England. The dish there is very appreciated both as a restaurant meal and as a takeaway dish.
Simnel is a fruit cake, similar to a Christmas cake, covered with almond paste, which is prepared for Easter in England. Eleven marzipan balls representing the true apostles of Jesus are laid out on top along the edge.
Traditions of English tea
If we look at breakfast, we will understand that the food in England coincides with breakfast in other countries. Usually in the UK the following diet: first breakfast, then lunch, tea and dinner in the evening. The British are very sensitive to food and always try to adhere to this regime.
The usual breakfast time is from 7 am to 9 am. Many people start it with classic oatmeal porridge. In England, they eat oatmeal with milk or cream, sometimes sugar is added to taste. The homeland of oatmeal is Scotland. The Scots never add sugar to porridge. Breakfast continues with bacon and egg, toast with jam and ends with tea or coffee. For a change, they also eat boiled eggs, chilled ham, and sometimes fish.
Lunch and dinner in the UK, the number and composition of ingredients are more or less the same. Lunch is usually supposed to be at one o'clock in the afternoon. Many working people can't always get home in time for breakfast, so they go to a cafe or restaurant at lunchtime. Lunch is a sacred rule, the British try not to miss the main meal. Lunch is a big high-calorie meal. It includes meat or fish, potatoes, various salads or fruit pudding, at the discretion of the person. After lunch, around four o'clock in the afternoon, the British drink tea with cake (sometimes with a cake), or one or two slices of bread with butter spread.
The national drink of England is tea. It is very popular among the population. The English prefer strong, freshly brewed English tea. It should be brewed according to the following technology: one teaspoon is put on the basis of each person and one is added to the kettle. It is drunk with or without sugar, but almost always with fat milk or cream. It is important to add tea to the poured milk, and not vice versa. The famous five o'clock tea is very famous. Various products are added to it: ham sandwiches, tomatoes, lettuce, bread with butter, fruits and cakes.
Dinner usually starts around half past six or a little later. In some English homes, dinner is the main meal. It can start with soup, then fish, fried chicken, potatoes, sometimes vegetables, fruits and coffee are served. In some English families, on the contrary, lunch is the main one, and in the evening only light dishes are prepared in their house, such as bread and cheese, a cup of coffee, cocoa or fruit.
One of the most popular meals for lunches and suppers is “fish and chips”. It consists of a piece of fried fish and some fried slices or sticks of fried potato. This meal is a good alternative to American hot-dogs. It is often sold in takeaway cafes and eaten on the stadiums during football matches.
The contemporary British do not stick to traditions too much. They cook much less than we do and prefer to have their meals in cafes. They really like tea with all kinds of pies and cakes, and on weekends they often cook with their favorite presenters of culinary programs to have this meal with their family and friends.
Recipes of English cuisine
English cuisine and we
As we said in the first chapter, a great preference is given to Chinese, Japanese cuisine. I wanted to know if the students at our school know English cuisine. For our research, I used a questionnaire method among students in grades 5-7. 40 people participated in the survey. According to the results of the study, we found out that only 15% of the respondents are familiar with English cuisine, and the remaining 85% are familiar with a little or not at all .
In order for students to learn and be enlightened about the traditions of another cuisine, like England, within the framework of country studies, we have drawn up an open lesson plan, where we talked about the peculiarities of English cuisine, as well as cooking one of the dishes.
After the event, we again conducted a survey among students of the same group, and we saw completely different results, 97% of students have information about English national cuisine.
Creating a recipe book
Having studied the culinary traditions of Great Britain, the preparation of some dishes, I met many more interesting recipes. In order not to lose this information I decided to compile a collection of recipes "Traditional dishes of Great Britain" in Russian and English. As far as I know, there is no such book in our bookstores. Of course, you can find information on various sites, but it's nicer to have a book that is always at hand. In addition, my collection of recipes can be useful for those who are interested in learning new English words. To do this, in each article of my collection, the name of the dish and the list of ingredients are given in Russian and English.
Conclusion
While working on the project, I got acquainted with English cuisine, traditional and festive dishes of England, and also introduced my classmates.
The British follow a diet. Main meals: morning tea, breakfast, lunch, traditional five o'clock tea, dinner.
The main traditional dishes are: deep-fried fish with potatoes, aspic eel,
The result of the work was a recipe book in Russian and English "Traditional dishes of Great Britain", made in the form of a booklet (Appendix 5)
Work on the project continues.. In the course of working on the project, I also found out that the British give great preference to meat. My prospects for the future are to study meat dishes and cook them.
We hope that after getting acquainted with our project, you will also want to get to know English cuisine better.
